Pink, sometimes called pink ribbon or tape, is the long-standing convention for binding legal documents in law offices and the courts, which is why the tape is supplied in pink.
6mm is the narrower, lighter-weight tape, and 9mm is a little wider and stronger. Both are stocked, so it comes down to preference and the formality of the document.
